Apple pie overnight oats



Today, 10th October, is world porridge day! Did you even know there was such a thing?!? And what better day to post the very first recipe to Sweet and Two Veg.


My name is Ros and I am addicted to porridge!! Seriously, I could eat it for every meal of the day! Hot porridge, overnight oats, baked oatmeal, I’ve even made a savoury porridge, I LOVE the stuff! But the funny thing is, until recently I hated it. I couldn’t stand the smell of it being cooked, the look of it turned my stomach, and the texture made me shudder. Then I decided to be a grown up about it and actually try it, so I came up with my version of overnight oats.


And this is where my love affair with porridge began, and oh what a love affair it is :) I have many different porridge recipes that I’ll be sharing with you, but this was the original, and is still one of my favourites, so it’s only right and fitting that the first post on my blog should be the recipe for my apple pie overnight oats (or if you’re being posh, you can call it bircher muesli).

Overnight oats are a great, prepare ahead, breakfast. Just perfect when you know you’ve got a busy morning ahead, or even if you’re having a lazy morning and want to do nothing more than just grab and bowl and a spoon and dig in - I’m not one to judge :)

Ingredients

1 apple, grated

200g Oats

60ml apple juice

Juice of a lemon

430ml Almond milk

100g sultanas

1 tablespoon maple syrup

1 teaspoon cinnamon

1 teaspoon vanilla

Optional toppings of sliced apple, pumpkin seeds, almonds

Method

  1. In a large bowl, mix together all of the ingredients, cover and refrigerate overnight.

  2. Divide into 4 portions, add toppings
